Bean Spread
Ingredients (makes 1 bowl)
- Organic Borlotti beans (soaked for 12 hours)
- 1–2 tbsp lemon juice
- 1–2 garlic cloves
- 2–3 tbsp olive oil
- 1 tsp ground cumin
- Salt and pepper
- Bean cooking liquid (to adjust the consistency)
Preparation
- Cook the Borlotti beans for 40–45 minutes.
- Drain them, reserving the cooking liquid.
- Place the beans in a blender.
- Add the lemon juice, garlic, olive oil and cumin.
- Season with salt and pepper.
- Blend until smooth.
- Gradually add the reserved bean cooking liquid until the spread reaches a creamy consistency.
- Adjust the seasoning to taste.
Storage
- Store in a tightly sealed container in the refrigerator.
- Keeps for about 1 week.
Serving suggestions
- As a spread on bread.
- As a dip for an aperitif or picnic.
- With fresh vegetable sticks.
Tip: Combine lentils and beans
Borlotti beans can also be added to lentil soup to create a hearty lentil and bean stew.
