Bean Spread

Ingredients (makes 1 bowl)

  • Organic Borlotti beans (soaked for 12 hours)
  • 1–2 tbsp lemon juice
  • 1–2 garlic cloves
  • 2–3 tbsp olive oil
  • 1 tsp ground cumin
  • Salt and pepper
  • Bean cooking liquid (to adjust the consistency)

 

Preparation

  • Cook the Borlotti beans for 40–45 minutes.
  • Drain them, reserving the cooking liquid.
  • Place the beans in a blender.
  • Add the lemon juice, garlic, olive oil and cumin.
  • Season with salt and pepper.
  • Blend until smooth.
  • Gradually add the reserved bean cooking liquid until the spread reaches a creamy consistency.
  • Adjust the seasoning to taste.

 

Storage

  • Store in a tightly sealed container in the refrigerator.
  • Keeps for about 1 week.

 

Serving suggestions

  • As a spread on bread.
  • As a dip for an aperitif or picnic.
  • With fresh vegetable sticks.

 

Tip: Combine lentils and beans

Borlotti beans can also be added to lentil soup to create a hearty lentil and bean stew.
