Lentil Salad
Ingredients (serves about 4)
- 250 g organic Anicia lentils
- 1 small red onion or shallot
- a piece of celery stalk or parsley stalk
- fresh herbs
For the vinaigrette
- Apple cider vinegar
- Olive oil
- Salt
- Pepper
- A little cumin (optional)
Preparation
- Cook the organic Anicia lentils for 20–23 minutes without soaking.
- Drain and allow to cool.
- Finely chop the onion.
- Finely chop the celery or parsley stalk.
- Mix everything with the lentils.
- Stir in the vinaigrette.
For a nutritious and filling meal
Variation 1: With vegetables (classic & hearty)
Additional ingredients
- 1–2 carrots, grated or finely chopped
Ideal
- as a side dish
- on cooler days
- when you want a more substantial meal
Variation 2: Fresh with apple (light, summery & filling)
Additional ingredients
- Dice 1 fresh tart apple and fold it in just before serving.
