Traditional Kniddelen

Traditional Dumplings with Whole Wheat Flour

  • Serves approximately 4–6 people

 

Ingredients

  • 1 kg whole wheat flour
  • 7 eggs
  • A pinch of salt
  • Milk (as needed)
  • Diced bacon
  • Cream
  • Salt
  • Pepper
  • Fresh parsley

 

Preparation

Dumplings

  • Place the flour, eggs and salt in a large bowl.
  • Gradually add the milk.
  • Mix into a fairly thick batter.
  • Bring a large pot of water to a boil.
  • Add salt to the water.
  • Reduce the heat slightly (the water should simmer, not boil vigorously).
  • Dip a spoon briefly into the hot water.
  • Spoon portions of the batter into the water.
  • Let the dumplings cook gently.
  • Once they float to the surface, they are cooked.
  • Remove with a slotted spoon.

 

Cream Sauce

  • Fry the diced bacon in a pan.
  • Add the cream.
  • Let it simmer gently for a few minutes.
  • Season with salt and pepper.

 

Serving

  • Pour the cream sauce over the dumplings, garnish with fresh parsley and serve immediately.

      Serving Suggestion

      • Traditionally served with bacon and cream sauce or with apple compote.
