Traditional Kniddelen
Traditional Dumplings with Whole Wheat Flour
- Serves approximately 4–6 people
Ingredients
- 1 kg whole wheat flour
- 7 eggs
- A pinch of salt
- Milk (as needed)
- Diced bacon
- Cream
- Salt
- Pepper
- Fresh parsley
Preparation
Dumplings
- Place the flour, eggs and salt in a large bowl.
- Gradually add the milk.
- Mix into a fairly thick batter.
- Bring a large pot of water to a boil.
- Add salt to the water.
- Reduce the heat slightly (the water should simmer, not boil vigorously).
- Dip a spoon briefly into the hot water.
- Spoon portions of the batter into the water.
- Let the dumplings cook gently.
- Once they float to the surface, they are cooked.
- Remove with a slotted spoon.
Cream Sauce
- Fry the diced bacon in a pan.
- Add the cream.
- Let it simmer gently for a few minutes.
- Season with salt and pepper.
Serving
- Pour the cream sauce over the dumplings, garnish with fresh parsley and serve immediately.
- Traditionally served with bacon and cream sauce or with apple compote.
